We have all had this dish at some time. Some of us even know how to prepare it. Some of us would like to but find it rather daunting. If you are in the second category, then Hema would have you know it’s really not that difficult to make baingan ka bharta.

I have renewed respect for bhaigan bharta after enjoying it at my favourite Mepali dhaba in Leh, Ladakh…regularly featured there. Called Himalayan Rest. (like that helps!) on Old Fort Road if anyone is going north.
